Adopt a share of a real wheel at a family dairy in the hills of Emilia. Your name goes on the rind, and the cheese starts coming to your door in three weeks.
A wheel needs two years. You do not. From week three you eat from a ready wheel, two boxes a year. Your own wheel is the bonus that keeps getting better on the shelf.
Every wheel already carries the dotted inscription, the dairy number, the month and year, and the consortium's fire brand. After the 12-month inspection, yours gets one more line: up to 17 characters, engraved by hand.

Our partner is a family dairy in the hills above Reggio Emilia that makes its wheels only from the milk of the Razza Reggiana — the red cows that made the first Parmigiano eight centuries ago. Their milk gives a fraction of what modern breeds give, so there is never much of it.
Milk, salt, rennet. Copper cauldrons. A cheesemaker who turns and brushes every wheel by hand for two years. That is the whole recipe.
Billed yearly · plus $39 shipping and import per box, express from the dairy · refundable until it ships

About three weeks after the founding release closes, from a ready 24-month wheel. Your own wheel keeps aging on its shelf and takes over from month 24.
Each box is cut and vacuum-sealed at the dairy and flown to you by express courier, door to door in three to five days. US import duties and the FDA paperwork are prepaid, so there is nothing to pay at the door. Parmigiano Reggiano is a hard, long-aged cheese and travels well for a week without refrigeration. Refrigerate it when it arrives.
$39 per box, charged when each box ships, so two boxes a year. It covers express courier from the dairy to your door and the US import duties, prepaid on your behalf. Sales tax is added at checkout where your state requires it. Half and whole wheels ship by freight and are quoted at checkout.
Yes. Every wheel is made by a member dairy of the Consorzio del Formaggio Parmigiano Reggiano, carries the dotted rind, the casein plate and the consortium's fire brand, and is inspected at 12 months like every other wheel. Your certificate carries the wheel's matricola number, so you can trace it.
Yes. Every adopter can book a visit to the dairy and the aging room. Whole-wheel adopters get a private visit for two included.
Reservations are fully refundable until your first box ships. After that your adoption runs for the year and you can cancel any time before renewal. If your wheel ever fails inspection, we replace it with another from the same month.
Reserve now, pay nothing until the release closes, and get a full refund any time before your first box ships.
